Cinnamon Kiss Cake – recipe

I know some of my friends expected me to post on Kosovo right now. But hey as things are cooking over there, I’ve decided to use hot air for something useful.
Here we go, Maida. Better late than never and when we do it, we do it right. As promised, here comes the apple skuta cheese cake recipe. You can make it in a pie model (or a round cake model) but I prefer the rectangular as it maks it easier to cut into smaller pieces.
Mix 300 g flour, a pinch of salt and a teaspoon of baking powder.
Add 0.15 l of oil (if you happen to be out of butter, hmm..)
Add 150 g brown sugar…
Mix until a sort of bumpy dough is formed. Spread two thirds of the dough on the bottom of an oiled cake model and push down with your fingers. Put the remaining third of the dough away.
Let’s get the apples ready. Peel and cut up 500 g of apples, I like to use Idared. Put them in a pot.
In a bowl, mix 5 tablespoons of sugar, two tablespoons of water and a tea spoon of cinnamon. Pour over the apples, put the lid on and let simmer for 6 minutes. In the meantime, prepare the skuta cheese filling.
Mix three eggs, 8 tablespoons of sugar and a bag of vanilla sugar with a mixer.
I added some seeds this time around. A mix of sesame, sunflower etc… Add 500 g of skuta cheese and mix gently.
After the apples have been ‘cooking’ for 6 minutes, drain the liquid and place them in the cake model. Spread the skuta cheese filling over them.
Sprinkle the third of the dough you’d set away on top of the skuta cheese filling. Put in the preheated oven and bake for about 1 hour at 180°C.
When the cake is done, let it sit for at least 10 minutes before cutting it into pieces. Serve with a kiss.

That looks to be about the best use of hot air possible! 🙂 Are those flax seeds or are they some kind of black sesame?

@lisa: 😀 and yes, those are flax seeds… the sesame and sunflower seeds mostly sunk by the time I took the pic…

Oh dear, my diet has not a chance now! I must make this..
I have a fresh tub of skuta in the fridge since it is an excellent (albeit hard to eat) diet food. I couldn’t stomach eating it plain but it will be heavenly in this torta! I can’t wait to do this!

I did change a few things: wholemeal flour works well with it and also, I couldn’t resist some cranberries. Didn’t kiss myself before eating, though. Will spare the kiss for my hubby. 🙂

Can’t go wrong with the step by step photos, thank you so much! I’m going to give it a try this weekend. Idared apples are new to me, grannysmiths are my baking standby. Would the alternative to the oil be about 9 ounces of butter? I’m guessing based on a conversion of .15 l to a cup measurement. I may have to experiment and let you know how it went. Thanks a million!

@Camille: Do let me know how it turns out!! I just looove skuta. I think the closest thing to it in English is curd cheese…?

@Maida: You are very welcome! Substitute the oil for 150 g of butter… I think that translates to about 4.5 oz? My math is far from brilliant, though 😉

PS: @ alcessa: Good idea with the cranberries. Sometimes I love to mess with the recipes. Case in point being the seeds. You can also mix in about 50g (1.5 oz, Maida) wheat meal just before adding skuta cheese. That’ll give the filling an extra scrumptious texture.

(since I used a low-fat skuta cheese with quite some fluid attached, I am going to try wheat meal next time and see what comes out).

@alcessa: Humm… danger zone there 😈 And yes, wheat meal (pšenični zdrob) is the perfect solution to bring the juicier cheeses under control…

@Maida: Re type of apples, Granny Smith is great and actually our favourite as a ‘raw’ apple, but Ida Red or Jonagold are my favourites for baking. I think they blend in better…
